Recipe: 

 

Meatballs Avgolemono with Potatoes (Giaovarelakia) :

For the meat balls:

  • 1 kg of mince meat
  • 125 grams of rice
  • 25 ml of olive oil
  • 1 egg
  • 1 piece of finely chopped up parsley.
  • 1 grated onion
  • salt, pepper, mint

Place in the pot with the water:

  • 1 carrot chopped
  • 1 piece of celery chopped

Place in the pot at the half hour point:

  • 2 to 3 small skinned potatoes

For the lemon-egg (Avgolemono) juice.

  • 1 egg
  • 1 lemon

Making the meat balls with the potatoes

All the meat ball ingredients should be mixed together.  Create hand sized balls from the mixed ingredients.  Place some water into a pot with salt, pepper and olive oil. Place the chopped celery and carrot into the pot. When the water comes to a boil place the hand sized balls into the pot. Let the meat balls boil in the water for 1 hour. On the half hour mark place the small skinned potatoes into the pot.

Making the Avgolemono juice

 After 1 hour take 250 ml of water from the pot. Take the yolk of the egg and beat it until it becomes thick.  When the yolk becomes thick place the yolk in and beat together, then squeeze the juice from a lemon and mix together once again. Then place the water into the lemon and egg mixture and beat together.

Final Step:

 When you are done mixing the Avgolemono juice place the juice  into the pot. Now you are ready to serve. 

Serves 4-6 servings.
